Oreo Truffles....Yum!
I found this recipe at Bakerella and I was waiting for a reason to make them. We are going to the in-laws tonight for dinner to celebrate Father's Day and my MIL's birthday. Seemed as good a reason as any to try them. I'll let you know how they are, but really, how can you go wrong with Oreo's and Cream Cheese?

Oh Balls!
I came across this recipe at Bakerella for cupcake pops and I have been waiting for an occassion to make them. Tomorrow at work we are having a Pretty In Pink Day to celebrate Mother's Day and we are donating a portion of the days sales to Relay For Life. Everyone was asked to make something.....finally I have a reason! I don't think they came out too bad for my first try. I still have about 50 more to do so I better get back to it.

Bow Tie Pasta w/ Shrimp and Feta
I've come up with a recipe that I just love
and I thought I would share it with you.
- olive oil
- juice of one lemon
- 3 shallots
- 3 cloves garlic minced
- couple pats of butter
- 1/2 cup white wine
- fresh chopped parsley
- 1 lb or so of shrimp
- bow tie pasta cooked to pkg directions
- feta cheese, as much or little as you like
- salt and pepper to taste.
- cook pasta according to package directions
Saute' shallots in olive oil until translucent and soft (I like mine well done, but whatever works for you.)
Add garlic, lemon juice, white wine, butter and bring to boil. Toss in shrimp and cook until pink. Add cooked pasta, parsley and feta cheese. Toss to coat.
Slap it on a plate and enjoy!
